They are the sweet of Siena created by the nuns of a Sienese convent in 1400,
even if its name seems to come from the Arabic term “qubbaita “, which translated into Italian means “almond cake”,
and this would prove that its history begins from far away.
The Copate are light pastry sheets of the same soft nougat dough, enclosed between two wafers.
